Recipe for Chestnut Stuffing

Shell one pound of chestnuts, put them into a saucepan with light stock to cover them, and cook them slowly until tender and the liquid absorbed. Mash them until smooth, and mix with half a pound of sausage-meat, three ounces of bread-crumbs and seasoning to taste. The sausage-meat may be omitted and a beaten egg used to bind the stuffing.
